Volcán de Ñoquis
Homemade potato gnocchi in a baked squash bowl, with tomato sauce and lots of melted cheese
We call it a volcano because of the way it reaches the table: a whole baked squash overflowing with homemade potato gnocchi, tomato sauce and a mountain of gratinated cheese melting down the sides. It's the pasta Argentines grew up with at Sunday family lunches, served the northern way.
It's a hearty dish to enjoy slowly, spoonful by spoonful, scraping the squash too, just like our humita in a squash bowl. Homestyle, generous and fairly priced, half a block from Plaza 9 de Julio. And a local tip: in Argentina, gnocchi are eaten on the 29th of every month, so if your visit falls on the 29th, you know what to order.
