Humita en cuenco
Pot-cooked humita in a baked squash bowl, with a glass of wine or lemonade
Humita is one of the flavors that define Salta: sweet corn, patience and slow pot cooking. Ours is made in the pot, the way it's done in homes across northern Argentina, and comes to the table inside a whole baked squash, golden outside and tender inside, with melted cheese on top.
It's a dish you eat by the spoonful, scraping the squash to the very end. It comes with a glass of house wine or our Caseros lemonade, which makes it an easy way to try traditional Salta food. Hearty, generous and fairly priced, half a block from Plaza 9 de Julio. And if you'd like to try it alongside other classics, it's also part of our Tabla Andina.
